Acquerello is a unique Superfino Carnaroli rice, cultivated and processed by the Rondolino family at the historic Colombara estate, located in the province of Vercelli. This rice stands out for three main reasons:

  1. Aging: Acquerello is the first aged rice in Italy. After harvesting, the raw rice is stored in refrigerated silos for at least a year, allowing the starch to stabilize. This process enhances the rice's ability to maintain its shape during cooking and absorb seasonings, making it ideal for any recipe.
  2. Processing with the "helical" method: It is the only rice in the world processed using this method, which dates back to 1875. The processing involves a gentle friction method that preserves the integrity of each grain, ensuring a fluffy and flavorful rice.
  3. Nutritional values: Acquerello is the only white rice that retains the nutritional values of whole grain rice. This is achieved through a patented process that reintegrates the germ, the vital part of the rice, back into the grain, thus preserving essential vitamins and trace elements.

The Colombara estate, historically dedicated to rice cultivation, was purchased by Cesare Rondolino in 1935. His son Piero started the production of Acquerello in 1992, aiming to establish a direct connection with consumers. Since 2000, the Rondolino family has focused exclusively on the Carnaroli variety and has collaborated with Slow Food to promote gastronomic culture.
