Capsicums, or Bell Peppers if you are American, are very high in Vitamin C. In fact, capsicums contain a more Vitamin C than oranges!
The red variety are much sweeter than orange or green capsicums and contain more vitamin C too. They are deliciously fresh when eaten raw but can certainly be cooked too! When roasted, they become especially sweet and develop a rich velvety flavour similar to that of stewed tomatoes.
