Eggplant (each)

Eggplant, or aubergine, is a vegetable long prized for its beauty as well as its unique taste and texture.

When roasted, Eggplant caramelises so nicely! The texture changes significantly becoming soft, fragile and creamy.

Eggplants grow in a manner much like tomatoes, hanging from the vines of a plant that grows several feet in height.

A fragile vegetable, it doesn't take well to temperatures that are too hot or too cold, it is best to store in a warmer section of the fridge. Place uncut and unwashed eggplant in a plastic bag and place towards the front of the shelf.
