Originally carrots were cultivated for their leaves, so get creative and put them to good use. A great way to do this is to whiz them up with grassy olive oil (or
avocado oil) into a pesto, along with a handful of almonds, a good grating of parmesan and plenty of garlic, so simple!
You won't need to peel these baby heirloom carrots, their skin is thin. Just give them a good scrub under cold water.
